{"id":4052,"date":"2015-04-20T21:43:02","date_gmt":"2015-04-21T02:43:02","guid":{"rendered":"http:\/\/sciencemediacentre.ca\/site\/?p=4052"},"modified":"2015-04-20T21:43:02","modified_gmt":"2015-04-21T02:43:02","slug":"drinking-170-year-old-champagne-for-science","status":"publish","type":"post","link":"http:\/\/sciencemediacentre.ca\/site\/drinking-170-year-old-champagne-for-science\/","title":{"rendered":"Drinking 170-year-old champagne for science"},"content":{"rendered":"<p><a href=\"http:\/\/sciencemediacentre.ca\/site\/wp-content\/uploads\/2013\/12\/SMCC-english2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-110\" src=\"http:\/\/sciencemediacentre.ca\/site\/wp-content\/uploads\/2013\/12\/SMCC-english2.jpg\" alt=\"SMCC-english2\" width=\"255\" height=\"126\" \/><\/a><\/p>\n<p>Tasting and chemically analyzing 170-year-old champagnes recovered from the Baltic Sea in 2010 has revealed some features of 19th-century winemaking practices.<\/p>\n<p>Researchers compared the chemistry of the historic bottles to that of modern champagnes and found the recovered bottles had less alcohol but higher levels of iron, copper, sodium and chlorine.<\/p>\n<p>The discovery of traces of oak related compounds suggests wines were aged in wooden barrels, and the presence of ribose, a simple sugar, suggests a use of grape syrup.
